Decaffeination using sugarcane utilizes a naturally occurring compound, ethyl acetate (EA), to remove caffeine from coffee. The EA process is relatively simple. Coffee beans are moistened with water, and EA is distributed throughout the bean. EA binds with caffeine in the bean and extracts it, while most other aromatic compounds remain untouched. Once the desired caffeine level is achieved, the remaining EA residues on the beans are removed by steaming.
