For this limited edition, we have selected a unique coffee from Papua New Guinea, named after the Lamari River that flows through the Eastern Highlands of Papua New Guinea. Lamari boasts an SCA cup score of 84, featuring flavors of milk chocolate, mandarins, and black tea, accompanied by pronounced sweetness, a clean finish, and a light to medium body.

The story of this coffee

The story of El Manzano coffee unfolds on the slopes of the Ilamatepec volcanic range in El Salvador, where farmer Emilio has been cultivating the Pacamara variety with exceptional care for many years. The secret of this coffee lies in the combination of high altitude, a unique Salvadoran variety, and a precisely managed natural processing method. Pacamara holds a special meaning for Emilio—not only for its outstanding cup quality, but also as a symbol of national pride in El Salvador. The result is a coffee with a distinctly fresh, floral, and fruity character that brings together the region, the farmer’s expertise, and respect for tradition. Each cup tells the story of the place, the variety, and the person behind it.

Growing and Harvesting

El Manzano coffee is grown at high altitude on the fertile volcanic soils of the Ilamatepec region, which give the beans their complexity and strong aromatic potential. Emilio introduced the Pacamara variety to his farm more than ten years ago and has been systematically developing it ever since, with a strong focus on quality. The coffee is harvested by hand, with careful selection of fully ripe cherries. Although Emilio traditionally favors fully washed coffees, he dedicates part of the harvest to natural processing. The goal is a clean natural process that allows the intrinsic flavor characteristics of the variety to shine, rather than emphasizing fermentation alone.

Exceptional coffee with an exceptional score

Cupping score is a scoring coffee quality rating used to assess the flavor characteristics of coffee. To be considered a cupping coffee, a coffee must achieve a cupping score of over 80 points.

In contrast, the commodity coffees you buy in supermarkets have scores below 80 points and are intended for mass production, where quality is not the main criterion. These coffees focus more on productivity and price. Cupping Score is a great tool to quickly get a handle on the quality of the coffee and its potential in flavor.

Preparation

El Manzano – Pacamara is a coffee that truly shines in brewing methods that highlight its complexity and aromatic clarity. Filter brewing methods such as V60 or Chemex are ideal, allowing its floral and fruity notes, bright acidity, and natural sweetness to fully develop. It also performs beautifully in an AeroPress, which enhances its juiciness and structure. When prepared as espresso, it offers a fuller body with caramel sweetness and delicate chocolate nuances.
