If there is something that is the greatest enemy of roasted coffee besides heat and light, it is air. Roasted coffee beans readily oxidize in the presence of air, which alters their taste profile and causes them to lose their aroma. On the other hand, during roasting, a significant amount of carbon dioxide gets trapped in the beans, gradually escaping afterward. Unlike other canisters that can only remove air to a limited extent, AirScape features a double lid, the lower part of which can be pushed down to the level of the coffee to expel all excess air.
