Brazil - Caparao - MIRIM will appeal to you with its natural sweetness and full, harmonious body. The cup is dominated by rich notes of brown sugar and dark chocolate, which combine with the subtlety of cashew nuts. A subtle hint of dried fruit completes the character of the coffee. Thanks to the natural processing and the specific microclimate of the Caparaó region, the coffee has a pleasant, clean acidity that is typical of the area. It is the ideal choice for those looking for a classic Brazilian profile of the highest quality with a modern twist.
The story of this coffee
Mirim coffee (meaning "small" in the indigenous Tupi-Guarani language) tells a story of respect for nature and the work of the farmer. The project was created under the wings of our partner FAF Coffees to harness the potential of smaller beans (size 14/15), which have been overlooked in the past in the specialty coffee segment. These beans account for 15-25% of the farm's production. Thanks to the Mirim project, farmers are paid for their entire crop, leading to what is known as 'full farm profitability'. This coffee is part of the wider Bob-o-link initiative, which brings together growers who strive for the highest quality while maintaining social and environmental responsibility.
Growing and harvesting
This batch comes from the Caparaó mountains, an area with steep slopes and a unique microclimate near the Pico da Bandeira National Park. The coffee is grown at altitudes of 1000-1100 m above sea level and is harvested entirely by hand, a necessity in the rugged terrain of the mountains. The farm is certified HNV 1 (High Nature Value), which confirms its regenerative approach - the farmers actively protect the soil with cover crops and minimise waste. After hand harvesting, the coffee is processed using a natural method and dried on African beds. The higher humidity in the Caparaó region allows for more intense fermentation, which gives the coffee its unmistakable fruity sweetness and complexity.
Exceptional coffee with an exceptional score
Cupping score is a coffee quality score used to assess the flavour characteristics of coffee. To qualify as an exceptional coffee, a coffee must achieve a cupping score above 80 points.
In contrast, the commodity coffees you buy in supermarkets have a cupping score below 80 and are intended for mass production where quality is not the main criterion. These coffees focus more on productivity and price. The cupping score is a great tool to quickly get a feel for the quality of the coffee and its potential in flavour.
Suitable preparation
Ideal for making espresso, where the full and balanced flavour of the coffee stands out, but also great forfilter coffee or French press. We recommend a medium grind and fresh water for the best taste experience.
