Winemaking Process
It all begins with a late, manual harvest, where grapes are handpicked into 25 kg boxes to preserve their integrity. Fermentation takes place in small 5,000-liter stainless steel tanks at a constant 24 ºC, followed by an extended 21-day maceration.
The wine is then aged for 18 months in 225-liter French oak barrels from the Allier forest – a key to its complex structure, refined balance, and multilayered elegance.
